Cooking instructions
Move one rack to the bottom of the oven. Preheat the oven to 400 F. Wash and trim the stems off the Brussels sprouts. Cut them into ¼’s and place them in a medium bowl with the butternut squash, kale, and 3-4 teaspoons of oil. Add the lemon herb oil #1. Mix well, then spread the vegetable mix onto the oven-proof tray. Place them on the bottom rack of the preheated oven. Cook for 8 minutes, stirring halfway through the cooking time, and then remove the tray from the oven.
While the vegetables are cooking, prepare the salmon. Remove the salmon from the packet and pat dry with a paper towel. Sprinkle salt and pepper on both sides of the fish. Place a medium saute pan on medium-high heat. Add 2-3 teaspoons of oil, then pre-heat the pan for 2-3 minutes. Gently place the fish in the pan. Cook for 4-5 minutes, then carefully flip the fish over. Cook the other side for another 3-4 minutes.
Reduce the heat to medium-low, then carefully pour the Maple Bourbon Glaze over the fillets. Heat for 1-2 minutes, spooning the glaze over the fish as it begins to boil. Fish should be cooked to an internal temperature of 145 F. Remove from heat and turn off the burner.
Place one fillet on each plate and pour the maple glaze over it. Serve the vegetables on the side. Enjoy!
