- Preheat the oven to 375ºF. Cut the bacon strips in half and place them in a medium skillet on medium heat. Par cook for 4-7 minutes, or until the bacon begins to brown. Flip the strips over halfway through the cooking process. Remove the bacon to a plate to be used in Step 4.
- While the bacon is cooking, place 1 cup of water in the small pot along with the dry quinoa. Bring to a boil on high heat. Cook for 8-10 minutes until the quinoa is softened. Drain well in the strainer.
- To make the meatloaf patties, Place the ground beef in a medium bowl with the vegetable blend, the seasoned egg, cooked quinoa, and 1/8 teaspoon of salt. Mix well to blend the ingredients, then form into 4 oval patties, approximately 1/2-inch thick. Return the medium skillet to medium-high heat. Add 2 teaspoons of oil and pre-heat for 2 minutes. Carefully place the patties in the pan and cook each side for 3-4 minutes to brown.
- Remove the skillet from the burner. (Transfer the meatloaf patties to the sheet tray as needed.) Spread the tomato glaze on top of the patties, and then lay a bacon strip on top of each. Finish cooking in the oven for 4-6 minutes. The meatloaf should be cooked to a minimum internal temperature of 155ºF.
- While the meatloaf patties are in the oven, fill the medium pot with 5 cups of water. Add 1/2 teaspoon of salt (optional), then bring to a boil. Stir in the broccoli and cauliflower, then cook for 3-5 minutes, depending on the desired tenderness. Drain well, then return to the pan along with the lemon herb dressing and salt and pepper to taste. Please turn off all heating elements.
- Place 2 patties on each plate, and then add a serving of lemony vegetables on the side. Enjoy!
