Place the large nonstick pan on a medium burner and preheat for 2-3 minutes. Place the Birria meat into the pan and cook to desired doneness we recommend you cook to the internal temperature of 145° then remove from the pan and set aside.While the meat is warming place the comsume in the small sauce pot on mediumm heat until boiling.
Return the pan to medium heat and unwrap the butter pats. Place into the pan and melt halfway then place the Jalapeno Cheddar bread in the pan. Next layer on the birria meat and the Mexican cheese blend. Top with the remaining slices of bread. Cook the first side for 3-5 minutes, lifting a corner with the spatula to check for desired brownness. When ready, flip the sandwiches over and heat until crisp. Remove pan from burner and turn off all heating elements.
While the sandwiches are cooking,wash and chop the cilantro, the stems can be eaten. Dice the onion and mix with the cilantro. Place consomé into two small bowls for dipping and sprinkle with half of the cilantro and onion mixture.

Cut the grilled cheese in halves, add the cilantro and onion mix, dip in the consume and Enjoy!
