Using your preferred cooking method, cook the Bacon to your desired crispness. Set aside (or hold in a 150 F. oven) for plating later.
While the bacon is cooking, prepare the pancake batter. Unwrap and melt the Butter Pats. (You can melt them in the microwave or a small sauté pan on the stovetop.) In the medium mixing bowl, combine the Dry Pancake Mix, Liquid Pancake Mix, and Melted Butter. Stir gently until the wet and dry ingredients are barely combined. Your batter should be a little lumpy. (Lumpy batter is happy batter!)
Place the large sauté pan (non-stick if you have it) over medium heat for 2-3 minutes. Add 2-3 teaspoons of oil and swirl to coat the bottom of the pan. Place approximately 1/2 cup of the pancake batter into the hot pan. If your pan is large enough, you may be able to cook two to four pancakes at the same time; just be sure not to overcrowd your pan.
When the edges of the pancake begin to set up, and you see bubbles forming on the top, it's time to flip the pancake. This should take about 3-4 minutes. After flipping the pancake, continue cooking for 3-4 minutes. Chef's tip: poke a hole in the bottom of the pancake using the corner of your spatula. If there is no raw dough, it's ready to come out of the pan! Repeat this process until all pancakes are cooked. (You can hold the pancakes in a 150 F. oven to keep warm until you are ready to serve.) Please turn off all heating elements once all the pancakes are cooked.
Place a pancake or two onto a large plate. Top with the Berry Compote and Orange Maple Butter. Serve the bacon on the side. Nom, nom, nom!
