- Preheat the oven to 300ºF. Wash and slice the tomato into 1/4-inch-thick rounds. Place the sausage patties and biscuits on the sheet pan and bake for 8 minutes. Remove the biscuits and set aside until plating. Place one slice of cheddar cheese on top of the sausage patties and bake for 3-5 minutes, or until the sausage is hot and the cheese begins to melt. Turn off the oven.
- While the biscuits and sausage are cooking, place the non-stick sauté pan on medium heat. Add 1-2 teaspoons of butter or oil and preheat for 2-3 minutes. Pour in the seasoned egg mix. Let cook for 2-3 minutes and stir to scramble the eggs. Continue cooking for 2-3 minutes more or to desired dryness. Turn off all heating elements.
- To assemble the biscuits, spread a spoonful of the chipotle aioli on the cut sides of the biscuits. Place the sausage and cheese on the bottom biscuit, followed by the scrambled eggs, tomato, and biscuit top. Take a sip of coffee, then DIG IN!
