Preheat the oven to 400ºF. Lightly oil the sheet pan. Place the tater tots on the pan then place in hot oven. Cook for 10-14 minutes until hot and crisp. Flip the tots over with the spatula halfway through the cooking time. Place the ciabatta rolls in the oven for 2-3 minutes to crisp then set aside until plating.
Remove the breaded chicken breasts from the packet. Preheat the saute pan over medium heat for 3-4 minutes. Add 2 Tablespoons of oil and heat for an additional 1 minute. Add the chicken breasts. Cook for 3-5 minutes per side. Once the chicken is crisp and fully cooked, remove from it from the pan. It is recommended to cook chicken to 165F.
While the chicken is cooking add the romaine lettuce and half of the caesar dressing to the mixing bowl. Mix well to coat the lettuce.
To assemble the sandwich: Spread the remaining caesar dressing onto the top and bottom of each roll. Place the crispy chicken breast on the bottom piece of the roll then top with dressed romaine lettuce and shredded parmesan cheese. Serve with a side of tater tots.
