Wash and dry the Heirloom Cherry Tomatoes. Cut the tomatoes into quarters lengthwise. Rough chop the Spinach. Set both the spinach and tomatoes aside for later.
In a medium saucepot, bring 4 cups of salted water to a boil. Add the Orzo Pasta and cook for 7-8 minutes or until tender. Drain the orzo, saving 1 cup of water for step 3.
Return the sauce pot to the burner and melt the Butter. Add the orzo and stir to coat. SLOWLY add the Herbed Carbonara Sauce and spinach while constantly stirring. Add the reserved pasta water to achieve your desired consistency. We like ours creamy!
Divide the orzo into 2 shallow bowls. Top each bowl with a ball of Burrata Cheese and cut an "X" into the burrata to expose the cream-filled center. Top the burrata with Fresh Micro Greens, scatter the cut tomatoes around the bowl, and drizzle each dish with Balsamic Glaze.
