To Prepare:
Place the desired amount of salad blend in a mixing bowl. Cut the apricots into 3-4 pieces. Trim the stem end of the figs and rough chop into small pieces. Add the apricots, figs and goat cheese to the bowl then stir in the desired amount of apricot vinaigrette. Taste then add salt and pepper as needed.
Top the salad with crumbled candied walnuts for a bit of crunch!
Serving suggestions: Divide into several lunches or dinner side salads. Make it a meal by adding your favorite protein! We recommend grilled chicken or pan seared salmon.
