Preheat oven to 350°F. Place the medium sauté pan on medium heat. Add 2 tablespoons of oil and preheat the pan for 3–4 minutes. Gently place the breaded chicken cutlets in the hot oil and cook both sides for 3–4 minutes until browned and crisp (add more oil to the pan as needed). Remove from the pan and place on the sheet tray. Place in the oven for 4–6 minutes to continue cooking the chicken breasts. It is recommended to cook chicken to an internal temperature of 165°F.
While the chicken is cooking, prepare the vegetables. Cut the potatoes and yellow onion into 1/2-inch chunks. Wash and dry the green cabbage. Cut into 1-inch chunks as needed. Place the large sauté pan on medium-high heat. Add 1 tablespoon of oil and preheat for 3 minutes. Carefully add the cut potato and cook for 2 minutes without stirring. Once the potatoes begin to brown and crisp, add the yellow onion to the pan. Sprinkle with salt and pepper. Stir and continue to cook for 2–3 minutes until the potatoes and onions are browned.
Next, add the cut cabbage to the pan. Sprinkle with salt and pepper and mix well. Lower the burner to medium heat. Cut the grain mustard butter into 4 pieces and stir into the pan along with 2 tablespoons of water. Simmer the mixture for 3–5 minutes until the cabbage is tender. Taste, then add additional seasonings as desired. Turn off all heating elements.
To plate your meal: Divide the warm potato and cabbage salad between two plates. Top with the crispy breaded chicken breast. Add a dollop of lemon caraway sour cream #1 to the chicken or potato salad... or both. Also pairs well with a squeeze of fresh lemon juice!
