- Pressure cooker directions: Preheat the oven to 400ºF. Place the fajita chicken and soup base into the instapot. Add 2 and 1/4 cups of water (18 fluid ounces) to the pot. Stir to mix. Put the lid on your instapot then set to pressure cook on high pressure for 10 minutes.
- While the soup is cooking, prepare the soup accompaniments. Slice the corn tortillas into thin strips. Place on the sheet tray then drizzle the strips with olive oil and a sprinkling of salt. Mix well then place in the hot oven for 10-14 minutes. Stir halfway through the cooking process. Remove from the oven when slightly browned and crispy.
- Wash the tomato then cut into small, diced pieces. Cut the avocado in half top to bottom and twist each half to expose the pit. Carefully wedge a knife into the avocado pit and twist it to pop it out (or scoop it out with a spoon). With a butter knife score the inside of each half into small, diced pieces. Using a spoon, scoop out the diced avocado. Set aside both tomato and avocado until plating.
- When cooking time is up, do a quick release of the steam. Carefully take off the lid then stir the soup. Taste then add salt, pepper, or your favorite hot sauce as desired. Turn off all heating elements.
- Ladle the soup into bowls. Sprinkle with the diced tomato, avocado, and cotija cheese. Lastly top with the crispy tortilla strips. Grab a cerveza and fiesta!

- Preheat the oven to 400ºF. Place the fajita chicken and soup base into the medium pot. Pour 2 and 1/4 cups of water (18 fluid ounces) into the pot. Stir to mix.
- Place on medium-high heat until the soup comes to a boil. Stir often to prevent sticking. Lower the heat to medium and simmer for 10-15 minutes more, or until the chicken is very tender.
- Taste then add salt, pepper, or your favorite hot sauce as desired. Follow Steps 2, 3 and 5 as outlined above.
