Place an oven rack in the center of the oven. Preheat the oven to 350 F. degrees. Lightly oil the oven proof tray.
Rub oil on both sides of the potato shells then sprinkle with salt and pepper. Spoon the cheesy mashed potatoes into the shells then press in with your hand to form a mound of filling then top with the shredded smoked cheddar cheese and bacon.
Put the tray in the preheated oven for 18-22 minutes. When the filling is lightly browned and hot throughout, remove from the oven.
