- Preheat oven to 400 F. Wash the mushrooms and red pepper. Slice the mushrooms into 1/4-inch slices and cut the pepper into 1/2-inch pieces. Place the sauté pan on medium-high heat. Add 2-3 teaspoons of oil. Let preheat for 3 minutes then add the mushrooms and peppers to the pan. Add 1/4 teaspoon of salt and a sprinkling of black pepper then mix well.
- After 3-4 minutes of cooking, add the vegetable mix. Sauté for 2-3 minutes then lower heat to medium. Lastly add the large pouch of gravy and bring to a low simmer.
- While the Shepherd's pie is cooking, add the mashed potatoes and seasoned cream to the medium bowl. Stir well to mix.
- To assemble the Shepard's Pie: If using an ovenproof sauté pan, simply spread the mashed potatoes over the top of the vegetable mixture. Place in oven for 6-8 minutes. If using a casserole dish, pour the vegetable mix into the dish then follow the same procedure as outlined above. Please turn off all heating elements.
- To plate, scoop your Shepherd's Pie into shallow bowls or plates. Enjoy!
