- Move one rack to the bottom of the oven, and one to the middle level. Preheat the oven to 400ºF. Lightly oil the sheet trays then add the sweet potato fries. Place in the preheated oven on the bottom rack. Cook until crisp, turning the fries halfway through.
- Divide the mushroom lentil burger into two patties, each about 3/4-inch-thick. Place the sauté pan on medium heat and add 1 tablespoon of oil. Allow the oil to heat for 3 minutes, and then carefully place the burgers in the pan. Press each burger down with the spatula as it cooks to flatten slightly.
- Cook each side for 3-5 minutes for a light brown, crispy crust. If the burger is getting too dark, lower the heat. Once the burgers are cooked through, remove the pan from the heat.
- Cut the whole wheat buns in half lengthwise. Warm the buns in a toaster or place them in the oven to crisp. Turn off all heating elements.
- To assemble the burger, spread the harissa ranch on the bottom of each bun, then top it with the lentil burger, arugula, feta, and the other half of the bread. Serve with the sweet potato fries. Take a bite and enjoy!
