- Open the ground beef and place in a mixing bowl. Add the panko and parmesan blend and seasoned eggs then form 8 even-sized meatballs. Place the large sauté pan on medium heat with 2-3 teaspoons of oil. Preheat for 3 minutes then carefully place the meatballs in the pan. Cook for 2-3 minutes then gently flip over and cook for 2-3 minutes on the other side.
- Add the Tomato Sauce to the meatball pan, then rinse out the sauce bag with 1/4 cup of water and add that to the pan as well. Spoon the sauce over the meatballs then lower the heat. Place the lid on the pan and simmer for 4-5 minutes, flipping the meatballs half-way through the cooking time.
- While the meatballs are cooking, prepare the pasta. Place the medium pot on high heat with 6 cups of water and 1/4 teaspoon of salt. Bring to a boil then add the fresh pasta. Return to a boil for 3 minutes then strain the pasta and add to the meatballs and sauce.
- To make the salad: Place the salad blend into the small bowl and mix in the balsamic vinaigrette. Taste and add salt and pepper as needed. Divide between 2 salad plates.
- Divide the meatballs and pasta between two plates, then sprinkle on the grated cheese. Mangia bene!
