GRILLING INSTRUCTIONS:
Preheat your outdoor grill for 5-7 minutes on medium heat. Place the bratwurst on the grill and cook for 4-6 minutes, turning occasionally to brown all sides. Sausage should reach an internal temperature of 160ºF. Pour the beer cheese sauce into a small sauce pot and place it on the side of the grill. Stir often until it comes to a low boil. (Make sure you don't burn the pot handle!) Turn the heat to low. Slice the pretzel rolls 3/4 through lengthwise and place on the grill. Close the lid and cook for 2-3 more minutes, checking often to ensure the rolls don't burn.
KITCHEN INSTRUCTIONS:
MACARONI SALAD:
Preheat the oven to 250ºF. Bring 4 cups of water and 1/4 teaspoon of salt to a medium pot to a boil. Stir in the macaroni and boil for 8-10 minutes. Drain, then rinse with cold water. Chop the celery sticks into 1/4-inch diced pieces. Rough chop the carrot sticks. Combine the vegetables, cooked pasta, and macaroni dressing in a medium bowl. Taste, then add salt and pepper as desired.
Place the medium sauté pan on medium heat with 2 teaspoons of oil. Preheat for 3 minutes, then place the bratwurst in the pan. Cook for 5-6 minutes, turning the bratwurst over occasionally to brown all sides. Carefully add 2 tablespoons of water to the pan, (be careful the oil will pop) then place the lid on to steam the bratwurst for 2-3 additional minutes. The sausage should reach an internal temperature of 160ºF.
While the bratwurst is cooking, pour the cheesy beer sauce into the small pot and heat on a low heat burner, stirring often, until it comes to a low boil. Slice the pretzel rolls 3/4 of the way through lengthwise, then bake in the oven until desired crispness. Turn off all heating elements.
SERVING SUGGESTIONS:
To assemble, spoon some beer and cheese sauce into the roll, then add the cooked bratwurst.
