- Move a rack to the bottom level of the oven. Preheat the oven to 425ºF. Remove the plastic lid from the ovenable tray then cover tray with aluminum foil to seal it.
- Place the tray on the bottom shelf of the preheated oven and bake for 20 minutes. Remove the tray from the oven and remove the aluminum foil. Return the uncovered tray to the oven for an additional 25-30 minutes, or until the vegetables are softened and the fish reaches an internal temperature of 145ºF. Turn off all heating elements.
- Place a fish filet on each plate. Stir the vegetables well, then spoon them onto the plates, including any juices that have accumulated in the pan. Enjoy!
