- Preheat the oven to 375ºF. Place the small pot on medium heat then pour in the Ranchero black beans. Add a pinch of salt then stir well. Heat for 4-6 minutes until the beans are hot.
- Place the medium sauté pan on medium heat. Add the Tinga chicken to the pan, plus rinse the bag out with 1 tablespoon of water and add that as well. Bring to a low boil then remove from heat. It is recommended to reheat the chicken to 165ºF.
- While the beans and chicken are cooking, warm the tostadas by placing them in the hot oven for 3-4 minutes. Remove from the oven and turn off all heating elements.
- Place the coleslaw blend in the small bowl then stir in the chipotle crema and a pinch of salt. For less heat, leave the coleslaw blend plain and drizzle on the chipotle crema as desired when plating.
- To serve your happy chicken meal: Place two tostadas on each plate. Spread on the Tinga chicken then pile on the coleslaw. Eat the black beans on the side (or layered onto your tostadas). Enjoy this authentic Mexican delight.
