Overview
Brought to you from our restaurant partner, Pollo Feliz. Features marinated pork shoulder slow roasted with pineapple juice, onion, dried chilies, vinegar, and dried spices. Served with corn tortillas, a chunky fresh pineapple salsa and creamy chile lime slaw salad. Quick, easy and tasty!
Cooking instructions
- Put the medium saute pan over medium heat and add the diced bacon. Once the bacon is crisp, add the Pastor Pork and continue cooking until the pork is thoroughly heated.
- When the pork is ready, place the large saute pan over medium heat and preheat for 2-3 minutes. When hot, place the corn tortillas in the pan and cook for 1-2 minutes per side, until hot and golden brown.
- Add the shredded cabbage to the medium bowl along with the Creamy Cilantro Lime Dressing and mix well. Taste and add salt and pepper as needed.
- To assemble the tacos: spread a spoonful of the pastor pork down the center of each tortilla. Top with the Pineapple Habanero Salsa. Serve with a side of the cilantro lime slaw. Fiesta time!
