- Move a rack to the bottom level of the oven. Preheat the oven to 425ºF. Remove the plastic cover from the ovenable tray. Take the chicken breasts out of the foil container and place on the plastic cover until Step 2. Add salt and pepper as desired to the vegetables then cover the ovenable tray with aluminum foil.
- Place the covered tray in the preheated oven and cook for 25 minutes. Remove from oven and take off the aluminum foil. Stir the vegetables then place the raw chicken breasts on top. Return to the oven for 20-25 minutes more, or until the vegetables are softened and the chicken reaches an internal temperature of 165ºF. Cooking times will vary.
- Divide the chicken and vegetables between two plates. Season with salt and pepper or your favorite spice blend as desired.
