- Preheat the oven to 425ºF. Lightly oil the oven proof sheet tray. Cut the potatoes in quarters lengthwise then place on the sheet tray. Drizzle with a bit more oil and a sprinkling of salt and pepper and mix well. Place in the hot oven for 8-12 minutes flipping halfway through the cooking time. Remove when browned and crisp.
- Place the medium sauté pan on medium heat with 2-3 teaspoons of oil. Preheat for 3-4 minutes then add the ground beef to the pan. Begin to heat, breaking the meat up with the spatula as it cooks. Continue cooking until the ground beef is fully cooked and chopped into pieces.
- Add in the sloppy sauce, plus rinse the pouch out with 2 tablespoons of water and add that as well. (For a less "sloppy" sandwich, start with half of the sauce and add more as desired.) Mix well and cook until hot. Taste then add salt and pepper as desired.
- Toast the whole wheat rolls for 1-3 minutes until crispy. Turn off all heating elements.
- To assemble the sandwich, simply place half of the Sloppy Joe on the bottom of each roll, top with a slice of cheddar cheese then the other half of the roll. Enjoy the roasted potatoes and green onion dip on the side. Viva la SLOPPY JOE!
