Place the large sauté pan over high heat and add 1 tablespoon of cooking oil. Preheat for 2 minutes. Remove the fajita marinated chicken from the package. Gently place the chicken into the hot pan. Sauté for 4-5 minutes. For food safety, it is recommended to cook the chicken to a minimum internal temperature of 165ºF.
When ready to serve: Wash and dry the grape tomatoes then cut into bite-sized pieces. In the mixing bowl, toss the baby romaine with the desired amount of creamy cilantro dressing. Top with cooked fajita marinated chicken, crispy spiced pepitas and black beans & corn. Enjoy!
