- Set out the pizza dough and let it come to room temperature (~ 15 to 20 minutes). Place the oven rack on the bottom level of oven. Begin to preheat the oven to 400 F. While the oven is preheating, prepare the calzone filling. Rough chop the broccoli into 1/4-inch pieces. Place the medium sauté pan on medium high heat with 2-3 teaspoons of oil. Preheat for 1-2 minutes then add the chopped broccoli and spinach to the pan. Season with 1/8 teaspoon of salt (optional). Sauté for 2-4 minutes until the broccoli begins to soften and the spinach is wilted. Place in the medium bowl along with the ricotta cheese blend and mix well. You may add additional salt and pepper at this point if desired.
For Baking:
- Use 2 tablespoons of flour to dust countertop, rolling pin, and hands with flour. Place dough on floured countertop and roll out to be roughly 12 inches wide (in diameter). If the dough stretches back let it rest for 5 minutes then re-roll. Use 1-2 tablespoons of the flour to dust the medium sized sheet tray. (Alternatively, you can line the tray with parchment paper if available.) Place the rolled-out dough onto the prepared sheet tray.
- Spread the cheesy garlic on the dough plus 3 tablespoons of the tomato basil sauce on the dough, leaving approximately a 1/2-inch from the edge. Spread the ricotta and vegetable blend on one half of the dough. Now fold the other half of the dough over to form a half moon. Press the edges down well with your fingers, or a fork, to finish sealing. Cut two, 1/4-inch holes (you can use a sharp knife or kitchen shears) in the top of the dough for venting. Bake until the crust is golden brown (~22-26 minutes).
- Turn the oven down to 365 F. in preparation for baking the cookies. Move the rack to the center of the oven. Slice the calzone into 2-4 pieces after cooled for two minutes. Serve with the remaining tomato sauce for dipping!
- To bake the cookies: Cut the cookie dough into 4 equal pieces and form into 1/2-inch thick round cookies. Place the dough on a greased and flour baking sheet (or lined with parchment). Bake for 9-12 minutes, rotating halfway through until the cookies are golden brown and slightly cracking on top.
